View of the beach from our hotel. It was pretty chilly and really windy (making the chill worse) so we didn’t really get a chance to walk around the shore.

The chicken lard was super fresh and crisp! I love that they piled on the mint and red onions. It really made a difference in the making the texture of the dish a bit more fun. The ground chicken was tender and the veggies made it crunchy.

This helicopter ride was an amazing experience. The pilot was a Cali transplant, who made for a very interesting companion. The helicopter was very tiny, which initially made me very nervous. I could feel every dips, tugs, and pulls of the wind very well. As the trip went on, I became accustomed to the sways and felt a lot better. The size of the it became an advantage. The helicopter was called Robinson R44, and it’s shaped like a dragonfly. The huge front glass that ran from knees up to the roof gave you an amazing view. It’s definitely a splurge, but SO worth it!

Since the temperature was still pretty low, the alligators weren’t active. It was still a great experience, since they also featured a ton of different animals. I really liked the squirrel monkeys.
